糍粑鱼

  • 腊鱼700g
  • 香葱2棵
  • 大蒜6瓣
  • 1块
  • 干辣椒若干
  • 花椒30粒
  • 白砂糖30g
  • 酱油2大勺
  • 陈醋5ml 1大勺

Steps to make 糍粑鱼

  • 1.将腊鱼切成2cm左右宽的块;
  • 2.用温水浸泡30分钟;
  • 3.捞出沥干并用厨房纸巾吸干水分;
  • 4.白砂糖中调入少许水和老字号零添加头道酱油;
  • 5.再加入陈醋,调匀做为料汁备用;
  • 6.煎锅中加适量油,烧至7成热,将腊鱼块皮朝下放置;
  • 7.煎至两面金黄捞出沥干备用;
  • 8.另起锅加入少许油,烧热后放入花椒、干辣椒煸香;
  • 9.再放入蒜末、姜丝、葱段煸炒片刻;
  • 10.放入腊鱼块翻炒,最后加入调好的料汁,炒至汤汁渐干,出锅时撒上葱花即可。
