随着春天的到来,乡野田边就会长出一丛丛嫩绿清新的鼠曲草(当地俗称“青”),没开花前嫩嫩的。清明时节,南方有一种很重要的习俗就是做青团、吃青团。每年我们都会相约去采青来做青团,“捣青草为汁,和粉做粉团,色如碧玉 ”。鼠曲草焯水捣细煮开拌进糯米粉中,再包裹着或甜或咸的各种馅料,上锅蒸熟即可。青团油绿如玉,外皮糯韧绵软,带有清淡却悠长的青草香气,是一款天然绿色的健康小吃。

    Steps to make 【清明果】青团

    • 1.新鲜采摘的鼠曲草洗净,这可是耐心活,我可是洗了数次呢。
    • 2.锅中放水烧开,放入鼠曲草焯水捞出过凉水。
    • 3.挤干水分,放入搅拌机中搅细。
    • 4.搅细的鼠曲草放入锅中,加适量水烧开。
    • 5.糯米粉和粳米粉比例为1:1混合好。
    • 6.煮开的鼠曲草连水倒入米粉中,用筷子搅拌。
    • 7.再用手和成粉团,盖保鲜膜醒发半个小时。
    • 8.这是炒咸馅的材料:香肠、笋、豆干、胡萝卜、咸菜、蒜苗。
    • 9.分别切成小丁。
    • 10.炒熟放凉。
    • 11.这是炒好的芝麻花生豆沙馅。
    • 12.豆沙馅搓成20g左右的小圆球。
    • 13.取30g左右的粉团,擀成圆片,放入豆沙,包圆收好口。
    • 14.蒸笼底部铺上粽叶,放上做好的青团。
    • 15.饺子状是用咸馅包起来的,放到铺了粽叶的蒸笼里。
    • 16.摆上蒸笼,锅中放水烧开,中大火上汽后蒸12分钟。(时间按青团的大小来掌握)。
    • 17.蒸好的青团。
    • 18.外皮糯韧绵软。
    • 19.带有清淡却悠长的青草香气。
