港式吐司
口味不输北海道的经典吐司,本配方用量是两个450g吐司的量。

  • 高筋面粉500g
  • 绵白糖80g
  • 奶粉16g
  • 1/2小勺
  • 酵母2小勺
  • 蛋液60g
  • 270g
  • 黄油50g

Steps to make 港式吐司

  • 1.将面团中除黄油以外的所有材料混匀,揉成面团,出膜后再加入黄油,继续揉至出手套膜。
  • 2.将面团揉圆,盖保鲜膜进行基础发酵。
  • 3.基础发酵至体积变为原来的2倍。
  • 4.基础发酵结束后,取出面团,称重后平均分为6等份,滚圆,盖保鲜膜松弛15分钟。
  • 5.将面团按扁排气,擀成长椭圆形。
  • 6.将长椭圆形两边向中间对折,按扁,擀成长条形,卷起。
  • 7.将面卷收口向下放入吐司盒,盖上保鲜膜,进行二次发酵。
  • 8.二次发酵至模具的9分满,刷蛋液。
  • 9.烤箱预热后,以上火180度、下火190度,烤制35分钟。
  • 10.出炉后,振动模具几下,立即脱模,晾凉,以保鲜袋密封保存
