双色黑芝麻冰皮月饼

  • 粘米粉40克
  • 澄面40克
  • 牛奶200克
  • 细砂糖30克
  • 玉米油20克
  • 黑芝麻馅280克

Steps to make 双色黑芝麻冰皮月饼

  • 1.把糯米粉、粘米粉、澄面、玉米油放入容器中,加入牛奶和细砂糖。
  • 2.搅拌均匀。
  • 3.放入蒸锅内,上汽后蒸约25分钟。
  • 4.取出晾凉至不烫手时揉搓均匀,盖上保鲜膜醒20分钟。
  • 5.把面团下成8个约35克的剂子。(我用的75克的模具)
  • 6.剩余的面团加入适量紫薯粉揉搓均匀。
  • 7.也等分成8份。
  • 8.取一白色饼坯摁扁,包入等量(35克)的黑芝麻馅。
  • 9.收严剂口。
  • 10.紫薯面皮擀成与月饼模具大小的圆片。
  • 11.月饼模里撒一些熟糯米粉,晃一晃,然后将多余的粉倒出来,再放入面片并刷上一层水。(此步是为了与包好的月饼粘得更牢固)
  • 12.放入月饼摁平。
  • 13. 压出月饼形状,并用小刷子轻轻刷去多余的手粉即可。
  • 14.做好的冰皮月饼,放冰箱冷藏后再食用,口感最佳
