  • 面粉500g
  • 牛肉150g
  • 红椒1个
  • 番茄100g
  • 番茄酱20g
  • 孜然15g

Steps to make 新疆拉条子

  • 1.在300g温水中加入少许盐，一点点倒入面粉中，揉成面团，饧20分钟左右。
  • 2.把面团按扁。
  • 3.然后切成条。
  • 4.用刷子沾油刷在面上，正反面都要刷。
  • 5.把面搓成比筷子粗一些的条，盘起来，然后用保鲜膜覆盖饧1个小时左右。
  • 6.把饧好的面盘在手上拉成比筷子略细的面条，放入开水锅中煮开（煮面时加入少许盐，面条不易碎，也不易粘连）。
  • 7.捞出过凉水，盛出备用。
  • 8.牛肉洗净切条；青、红椒洗净，切条；番茄洗净，切片。
  • 9.油加热，放入葱末，姜丝，蒜片爆香后放入牛肉，炒至变色。
  • 10.然后放入盐和孜然，炒匀后放入青、红椒，番茄翻炒。
  • 11.加入少许水，放入番茄酱，鸡精炒熟，临到面上拌匀即可。
