【东北】四喜丸子
由四个色、香、味俱佳的肉丸组成,寓人生福、禄、寿、喜四大喜事。常用于喜宴、寿宴等宴席中的压轴菜,以取其吉祥之意。

Steps to make 【东北】四喜丸子

  • 1.食材备齐
  • 2.将肉馅放在大碗内,加入葱姜末,盐,鸡粉,胡椒粉,料酒,鸡蛋,用筷子顺一个方向搅拌均匀
  • 3.加入2汤匙淀粉,分次加入半碗水,用筷子顺一个方向搅拌,直到肉馅上劲。
  • 4.锅加油烧至6-7成热,将肉馅分成4份,用手团成圆形,放入油锅中炸制金黄定型,捞出待用
  • 5.锅加水下入,酱油,白糖,花椒,大料,葱段,姜片,鸡精,烧开下入丸子,盖上锅盖中小火煮30分钟
  • 6.期间,另起一锅加入水烧开,加入少许盐,下入油菜焯水至断生,捞出放入冷水中投凉,捞出沥水
  • 7.将煮好的丸子捞出摆在盘内,四周摆上油菜
  • 8.将煮丸子的汤汁加入水淀粉,加热至粘稠,浇在丸子上即可
