京味小吃:糖卷果
糖卷果是北京风味小吃中的名品,深受中外食者青睐,尤得女性食客的喜爱。糖卷果主料用山药和大枣,配以青梅、桃仁、瓜仁等辅料。山药鲜品营养丰富,含蛋白质、精纤维及维生素等成分,是中医传统的用药。

    Steps to make 京味小吃:糖卷果

    • 1.主料:山药、大枣、核桃仁、瓜子仁、果脯
    • 2.辅料:面粉、白糖、桂花、油豆皮
    • 3.油豆皮用冷水浸泡片刻。
    • 4.大枣去核切两半。(可将红枣提前温水浸泡一下)
    • 5.山药去皮,略微拍下切碎块。
    • 6.果脯切碎丁待用。
    • 7.将枣、果脯、少许白糖、山药拌均。
    • 8.稍加水和面粉,搅拌均匀。(有粘手感即可)
    • 9.用油皮将拌匀的料裹包好。
    • 10.上蒸锅蒸至20-30分钟。
    • 11.取出趁热置于寿司竹帘上,捏成圆卷或三角型,凉后切成2公分的厚片。
    • 12.锅置火上油烧至七成热,下入卷果。
    • 13.炸至金黄色捞出。(原小吃谱上是炸至焦黄色捞出,本人觉得金黄色的色泽更漂亮)
    • 14.锅置火上加油、水、桂花、白糖,小火熬成糖稀。
    • 15.将炸得的卷果倒入,裹上糖汁,撒上白芝麻即可。
    • 16.特点:软绵香甜,十分可口。
