广式五仁月饼

Steps to make 广式五仁月饼

  • 1.转化糖浆、米糠油、枧水放在一起,用打蛋器搅拌均匀。
  • 2.筛入低筋面粉。
  • 3.揉成团,盖保鲜膜饧发一个小时轻轻翻拌均匀,成为面团,盖上保鲜膜,放到冰箱冷藏1个小时以上。
  • 4.五仁馅分成35g每份。
  • 5.饼皮分成18g每份。
  • 6.取一份饼皮压扁,放上五仁馅,并把饼皮贴紧,左右手相互配合,从下往上轻推月饼皮,并用手指不断转动皮和馅,使饼皮均匀的包裹在馅上。
  • 7.收好口。
  • 8.月饼胚表面薄薄裹上一层面粉,再把月饼胚放入模具里。
  • 9.直接压到烤盘中,全部做好。
  • 10.表面薄薄喷一层雾水,放到预热好的烤箱中,中层、上下火180度,先烤5分钟。
  • 11.拿出来轻轻的刷一层蛋黄水,放回烤箱,继续烤15分钟左右至表面金黄即可,出炉晾凉。
  • 12.来个特写,晒晒咱家的五仁月饼,酸甜美味,口感不错哦。
