  • 可可粉少量
  • 动物淡奶油180g

Steps to make 献给母亲节的礼物——康乃馨蛋糕卷

  • 1.准备材料,蛋清蛋黄分离(取4个蛋清,3个蛋黄)
  • 2.蛋黄中加入35g细砂糖,用打蛋器打至起泡
  • 3.再依次加入水、色拉油、柠檬汁搅拌均匀
  • 4.蛋黄糊中筛入低筋面粉和玉米淀粉
  • 5.用打蛋器拌成均匀的面糊
  • 6.蛋白分二次加入细砂糖30g,打至湿性发泡
  • 7.提起打蛋器呈现尖角的状态
  • 8.取三分之一打发好的蛋白,放入蛋黄糊中翻拌均匀
  • 9.再将拌好的面糊倒回剩余三分之二蛋白中
  • 10.继续翻拌成细腻糊状
  • 11.抹茶粉和红色素用少量水化开
  • 12.取两小份面糊分别加入抹茶和红色素拌匀装入裱花袋,尖角剪一小口
  • 13.在铺了油纸的烤盘上分别描绘出康乃馨花朵和叶枝图案,放入预热好170度的烤箱1.5分钟拿出
  • 14.将原味面糊倒入烤好花纹的烤盘,用刮板抹平蛋糕糊表面
  • 15.拿起烤盘,用另一只手轻拍底部,拍出大气泡,放入预热好170°的烤箱,上下火,烤15分钟左右
  • 16.烤好的蛋糕片马上倒扣在晾架上防回缩,趁热撕去油纸,再盖回去,这样可以防止卷的时候出现裂纹
  • 17.蛋糕四周剥边,以2cm的间隔在蛋糕片上划出浅浅的刀痕,动物淡奶油加细砂糖隔冰打成奶油霜,用抹刀抹在蛋糕体上
  • 18.摆上香蕉断
  • 19.慢慢卷起来,用油纸包好放冰箱冷藏1小时定型
  • 20.可可粉加热水化开,放入裱花袋剪一细口,在做好的蛋糕卷上写上母亲节的字样
