外边做的月饼太甜太腻 所以自己制作的比较好吃 哈哈

  • 转化糖浆75克
  • 枧水1克(碱水)
  • 蛋黄水少许
  • 月饼馅料250克

Steps to make 月饼

  • 1.准备食材 馅料一共250克够做十个50克的月饼 我准备了豆沙(超市买的7元一袋450克)和菠萝馅(网上买的7元100克)两种
  • 2.碱水1克+糖浆75克+色拉油30克搅拌均匀
  • 3.筛入低筋粉100克
  • 4.用刮板搅拌成面团(用手也可以 因为有油所以不会很沾手) 搅拌后盖上盖子或保鲜膜冰箱冷藏或放阴凉处静置一小时
  • 5.醒面的时间 此时可以准备馅料 大家喜欢什么馅料就准备什么馅料 25克一个 (网上配方都是30多克一个 我觉得太甜了所以改了一下 这个可以按个人喜好自己定)
  • 6.醒好的面平均分成10个
  • 7.把饼皮压扁包入馅料
  • 8.利用虎口慢慢收紧
  • 9.粘些干面放入磨具
  • 10.放入磨具
  • 11.打入烤盘
  • 12.190度烤箱后放入月饼烤5分钟定型
  • 13.拿出刷一层蛋黄液 只刷表面即可 之后放入烤箱转170度
  • 14.15分钟后 出炉 晾凉后 就可以吃 也可以放入保鲜盒室温静置1-2天回油后会更加软
