DIY网红奶油栗子泥慕斯小狗,多重美味,可爱Q弹
这是只很容易让人一见钟情的小甜点,只做小狗可以不用烤箱。
琢磨了很多配方,发现自己来做即使用最少的材料(一只蛋黄),慕斯液还会有很多富余,
于是决定给小狗加一个底座——相同材料的方形慕斯蛋糕,
如此,既有趣又不浪费材料,一举两得。

Details of ingredients

  • 低筋面粉60克
  • 橙汁40克
  • 色拉油50克
  • 白砂糖40克
  • 生蛋清4个
  • 生蛋黄3个
  • 白醋1-2滴
  • 栗子泥100克
  • 奶油奶酪90克
  • 牛奶65克
  • 淡奶油110克
  • 细砂糖20克
  • 吉利丁片6克
  • 君度酒3-5滴
  • 蛋黄1个
  • 黑巧克力数小块

  • 1.部分材料如图。
  • 2.蛋糕坯的制作步骤同之前发过的“橙香基础戚风”,这里暂且省略。如图所示,将蛋糕糊倒入垫有油纸的8吋方形烤盘里,轻轻磕几下震去大气泡。
  • 3.烤箱175度预热,中层,40分钟左右,待蛋糕表皮干燥即可出炉。去掉油纸,在烤网上倒扣晾凉。
  • 4.烤制蛋糕的时间里刚好制作慕斯层。将奶油奶酪,栗子泥,细砂糖放入容器,隔热水,一边加热,一边用刮刀或铲子搅拌。
  • 5.待材料完全软化,用电动打蛋器搅打至松软均匀。
  • 6.将蛋黄、牛奶放入小锅中,用手动打蛋器搅匀,再加入吉利丁片,静置五分钟。小锅放到中小火上,边加热,边搅拌,直至吉利丁片完全溶解。关火,晾至不烫手。
  • 7.将晾好的蛋奶液分三次加入刚刚的奶酪栗子糊中,加一次搅匀再加下一次。
  • 8.蛋奶液和栗子奶酪糊充分混合后,为了让小狗的毛色看起来更好看,可以再加入3-4小块融化的黑巧克力,搅匀。
  • 9.所有材料都搅拌均匀后,加入数滴君度酒,再次充分搅匀。
  • 10.君度酒是一种橙子味甜酒,加入甜点中别有风味,不建议省略。淡奶油用电动打蛋器搅打至6分发,即:可以缓慢流淌的状态。倒入刚搅好的糊糊里。
  • 11.充分翻拌均匀即可。如下图所示的状态。注意是翻拌,不要搅动。
  • 12.慕斯液就做好了,准备好小狗模具,用融化的黑巧克力预先画上眼睛和鼻子等部位。
  • 13.放入冰箱冷冻几分钟,使其凝固,注意用冷冻,速度会很快。待巧克力凝固后,将慕斯液倒入小狗模具里,注意少量多次,边加边轻轻调整模具,使慕斯液均匀分布在容器的每个区域,脚爪等细致部位可以用叉子尖或者竹签协助,装满后提起模具轻轻磕几下,震去大气泡,也让慕斯液更均匀紧实。
  • 14.放入冰箱冷冻室,冷冻5小时以上。只做小狗的话,到这里就已经完成了。接着做蛋糕底座。用八寸方形慕斯模具在蛋糕坯上量好位置,去掉多余的边。
  • 15.把蛋糕坯片成两片。
  • 16.慕斯模子用锡纸包好,注意平整。
  • 17.放入第一片蛋糕坯,倒入一半慕斯液。
  • 18.在慕斯液上轻轻盖上第二片蛋糕坯,整理平整,倒入剩下的慕斯液。
  • 19.将表层的慕斯液抹平。
  • 20.放入冰箱冷藏5小时,注意,之前用冷冻,这里用冷藏即可。下面的工作就是组合蛋糕啦~将凝固后的慕斯蛋糕取出,用吹风机的热风沿边缘吹几圈,取下慕斯模子即可。
  • 21.在慕斯蛋糕表面筛上一层可可粉,放上小狗,再装个小绿植(薄荷叶)装饰就OK了。
  • 22.爱它就吃掉它~咔咔~
  • 23.蛋糕毫不犹豫就切了,对小狗狗真有点儿下不了手~O(∩_∩)O~
