红烧猪脚

  • 生抽2勺
  • 老抽2勺
  • 料酒2勺
  • 卤料包一小袋

Steps to make 红烧猪脚

  • 1.猪脚冷水下锅,水开后焯水5分钟,捞出洗干净。
  • 2.准备几片姜和小辣椒干,喜欢吃辣的可以多加几个干辣椒。
  • 3.焯水后的猪脚冲洗干净,沥干水。
  • 4.起锅烧油,下冰糖粒,小伙熬到糖融化,成浅咖啡色。
  • 5.倒入沥干水份的猪脚。
  • 6.翻炒均匀,上色。
  • 7.加入一大勺豆瓣酱。
  • 8.加入姜片、干辣椒,翻炒均匀。
  • 9.加入生抽、老抽、料酒、卤料包,加入水,水量是可以浸泡猪脚,水开后撇去浮沫。
  • 10.转入高压锅,加入胡椒粉(因为要撇去浮沫,不能太早下胡椒粉)。如果没有高压锅,就在炒锅里中小火烧煮45分钟,转小火10分钟至猪脚软糯。
  • 11.大火烧5分钟,转中小火,烧20分钟,最后转小火,烧10分钟。
  • 12.烧好了,颜色漂亮,味道不错。
  • 13.装盘了,白米饭来2碗吧。
