  • 1.准备食材,将糯米与莲子、红豆分别洗净浸泡12小时,糯米要泡到用手指轻松碾碎的程度,莲子和红豆也要充分泡透。因为这次的八宝饭是一次成型,糯米和莲子红豆都需要充分泡透,不然不容易蒸透。
  • 2.蜜枣中间一切为二,泡好的莲子酿在蜜枣的中间。
  • 3.取一个深一点的碗 碗内侧薄刷一层油防粘,将酿好莲子的蜜枣的切面朝下(规整的一面朝下码放,成品倒扣出来后整齐美观), 依次在碗中码好。
  • 4.泡好的糯米、红豆填入码好的蜜枣莲子上压实,撒上红糖。可以根据自家口味加上些葡萄干、坚果、豆沙、果脯类等食材,不用刻意,按自己喜欢来。
  • 5.再次撒上一层糯米和红豆,撒上红糖,加入清水。清水的量与食材持平即可。
  • 6.放入高压锅,盖上盖子,上汽后改小火压40分钟。
  • 7.压力锅自然排汽后取出。
  • 8.将蒸好的糯米饭倒扣在盘中即可。
  • 9.成品!上桌前淋上些桂花酱增加风味。
