【月饼季】广式莲蓉蛋黄月饼
看到月饼,意味着中秋节即将到来 ,而今年是我开始做月饼最早的一次。 用的是传统的莲蓉蛋黄馅,很好吃 ,做好的月饼表皮有点偏硬,需要等上两三天回油就更好吃

  • 蛋黄8个
  • 莲蓉馅520克

Steps to make 【月饼季】广式莲蓉蛋黄月饼

  • 1.糖浆和油用手动打蛋器混合均匀
  • 2.加入过筛的面粉
  • 3.用刮刀按压 叠加均匀、然后用保鲜膜将面团包住,静置半小时
  • 4.蛋黄用油提前侵泡一晚上,然后放入烤箱烤5到8分钟,上下火180度,略出油即可
  • 5. 把莲蓉馅分成每个65克的小团,然后用莲蓉包住蛋黄,备用,,,,静置好的饼皮分次每个25克小剂,用月饼皮包住馅料,再放入模具中压出形状
  • 6.放入预热好的烤箱,上下火170度,烤10分钟后,取出刷上蛋液,再继续烤10分钟左右即可
  • 7.出炉后放凉,就可以包装咯
  • 8. 放常温下等待两三天就可以回油,口感会更好
  • 9.成品欣赏
