【台州】炊圆
炊圆~是我们台州特色小吃,几乎老一辈人都会做,我也是小时候妈妈在做,我在旁边看着学来的。长大了因为工作原因在外地定居所以经常想念小时候的味道。刚出炉时我家孩子吃了3个,当咬下一口时他告诉我:“妈妈这太美味了美味到爆,吃了一口便会爱上它。”晚上上床后小家伙还想吃被我训了一顿,毕竟是糯米粉做的我怕晚上吃多不好消化,谁知黑灯瞎火的他竟然下床去厨房偷吃了一个,真让我哭笑不得。今天把它写成菜谱有不足的请指教。

  • 冬笋60g
  • 萝卜60g
  • 糯米粉300g
  • 梗米粉150g
  • 肉末150g
  • 沸水350g

Steps to make 【台州】炊圆

  • 1.冬笋、胡萝卜、豆腐干切丁。夹心肉剁成末
  • 2.锅里倒入少许油,油热后倒入肉末翻炒变色
  • 3.倒入蔬菜丁翻炒片刻
  • 4.翻炒均匀
  • 5.倒入少许生抽、料酒、盐、糖
  • 6.撒上葱花和虾皮,少许鸡精提鲜。(馅料不用炒太熟,等会还要蒸)
  • 7.盛出备用
  • 8.糯米粉和梗米粉混合。比例为2:1
  • 9.倒入沸水用筷子搅拌均匀,盖上保鲜膜三分钟后揉面团
  • 10.揉面是个苦力活,揉到三光、手光、粉团光、容器光。菜谱中的水供参考,可以先预留一部分,水多了蒸好会变形太软会塌。
  • 11.取一小块粉团搓圆
  • 12.捏成小碗状(不要捏的太薄,太薄会破糯米粉团没有面粉团有韧劲)
  • 13.包入炒好的馅料
  • 14.用虎口收口(底部最好用油纸垫或者菜叶、粽叶,我第一次用这个垫有点粘。)
  • 15.依次包好
  • 16.放入蒸锅中火大概12分钟左右。(具体时间根据炊圆的大小来增减)
