陕西小吃——酸辣凉皮
天气一热,人就特别不想动弹。想把一切能省的事情都省掉,比如做饭,甚至连吃饭都想一起给省了。
有木有一款做法简单却又非常诱人食欲的食物呢?有!
这就是咱陕西人的最最爱——凉皮。

上午凉快的时候蒸好,晾着,到中午热的时候不想进厨房了,简单一拌,美滋滋的简单一餐就是这样了!
凉皮的制作过程主要分为洗面水、沉淀、蒸制几个过程。每一步都是制作出筋道爽口的凉皮的关键步骤。下面一一进行介绍。

Steps to make 陕西小吃——酸辣凉皮

  • 1.面粉加适量水和成面团,充分揉搓至面团光滑起筋,饧一小时。
  • 2.饧好的面团再次揉揣一番,加少量水,用手揉搓面团,使清水变成比较稠的面水。
  • 3.洗好的面水倒入一个比较大的盆中统一放置,再次加少量水重复洗面。
  • 4.直至面团洗出的水比较清,剩下一团面筋即可。
  • 5.把洗出来的面水进行充分沉淀,至少五六个小时,最好是隔一个晚上比较好。
  • 6.把沉淀好的面水上层的清水倒掉,倒得越干净蒸的面皮越筋道,然后把底层沉淀的淀粉用勺子彻底搅拌起来。
  • 7.剩余的面筋放锅中蒸熟或煮熟备用。
  • 8.蒸凉皮的锣锣或不锈钢盘上用刷子轻轻刷一层油。
  • 9.倒入适量面糊。
  • 10.锅中水烧开后把凉皮锣锣放在沸腾的水面上来回转动,使面糊均匀地附着在锣锣上,加盖蒸1分钟,待面皮鼓起大泡来说明就熟了。
  • 11.取出锣锣,用筷子顺锣锣边缘划一下,用手就能非常容易地取下蒸好的凉皮来。
  • 12.蒸好的凉皮表面刷一层油,依次摞起来放一叠,切成自己喜欢的形状,加自己喜欢的调料即可食用啦!
  • 13.下面介绍一种简单的凉皮拌法。现在外面卖的凉皮大都是用绿豆芽拌的,当天家里没有,我就用黄瓜和胡萝卜拌了一下,一样好吃哦!凉皮切成相同宽度的条装入大碗中。
  • 14.取一小碗,加入食盐和少许味精。
  • 15.加少许生抽。
  • 16.加适量香醋。醋量要多一些。
  • 17.一瓣蒜用刀具擦成蒜茸放入调料汁里。
  • 18.胡萝卜和黄瓜分别切丝放入切好的凉皮上,再加入油泼辣子,倒入调好的调料水,淋适量香油,搅拌均匀即可开食。
