浓香可可蛋糕卷

Steps to make 浓香可可蛋糕卷

  • 1.准备所需食材
  • 2.蛋黄蛋白分离,蛋黄中加入25g糖搅拌至顺滑
  • 3.倒入玉米油搅拌均匀
  • 4.继续倒入水拌匀
  • 5.低粉过筛入拌好的蛋黄中
  • 6.搅拌成细腻的蛋黄面糊
  • 7.蛋白中滴入几滴柠檬汁低速打发至起大泡,加入15g糖
  • 8.继续打发至细腻点的状态再加入15g糖
  • 9.高速打发至蛋白起大纹路且不会轻易消失最后加入15g糖
  • 10.继续打发至提起打蛋头蛋白呈软软的尖角,即湿性发泡状态,做蛋糕卷打发至此状态即可,不要过度打发
  • 11.图中所示湿性发泡状态
  • 12.取1/3蛋白加入蛋黄糊中
  • 13.搅拌成细腻的蛋糕糊
  • 14.再把搅拌好的蛋糕糊倒回剩余的2/3蛋白中
  • 15.用上下翻拌的手法切拌均匀,千万不要画圈,以免造成蛋白消泡
  • 16.蛋糕糊中加入可可粉
  • 17.继续用上下翻拌的手法搅拌成细腻的可可面糊
  • 18.搅拌好的可可面糊倒入铺有油纸的烤盘,轻震两下去除大气泡,用刮板抹平表面(此时烤箱预热,温度150度,定时10分钟)
  • 19.放入提前十分钟以150度预热好的烤箱,中层,135度,上下火,25分钟,烤好取出倒扣晾凉
  • 20.另取一张油纸,将蛋糕片移至,并借助擀面杖裹紧,拧紧两端放入冰箱冷藏一小时至定型
