Steps to make 湖南面子扣肉

  • 1.猪皮切正方形洗净待用。
  • 2.洗净放入压力锅煮十分钟,放入少许盐。
  • 3.煮熟装盆。
  • 4.倒入百事可乐淹盖猪皮十分钟。
  • 5.泡好的猪皮拿出来晾干水分,油烧至五成热放入猪皮,(注意小火慢炸,盖上锅盖防止油炸出来)。
  • 6.炸好的猪皮放入冷水泡十分钟,再用压力锅煮五分钟,如图所示。
  • 7.前腿肉用压力锅压二十分钟,放凉用手撕开,让入油翻炒一分钟放辣椒面,盐,少许味极鲜,倒入猪肉的原汤少许煮二十秒放入鸡精盛出备用。
  • 8.把炸好的猪皮反面放碗底,注意是反面因为蒸熟后要翻一面,把炒好的肉放上面,入压力锅蒸七八分钟。
  • 9.蒸好的湖南面子肉出锅,用盘子翻一面就是上图,面子肉上撒点胡椒粉是精髓。
