五仁月饼
又是一年中秋到了,买了些材料自己在家做月饼,参考的是梅依旧老师的方子。在我的记忆里,每每中秋,妈妈都会拿回一百来块的月饼,因为那个时候妈妈在粮食部门上班,每到中秋都会分到好多自己单位加工的料足好吃的月饼,我和妹妹都会吃好长的时间,最后只剩下馅,光吃皮了。这次自己做些过中秋,体味一下子打月饼的乐趣。

  • 面粉200克
  • 腰果40克
  • 白芝麻40克
  • 糯米粉200克
  • 鸡蛋1个
  • 花生油50克
  • 枧水2克
  • 玫瑰酱20克
  • 奶粉10克
  • 熟花生120克
  • 葵花籽仁40克
  • 黑芝麻40克
  • 杏仁40克
  • 白糖100克
  • 玉米油50克
  • 转化糖浆150克
  • 90克
  • 葡萄干10克

Steps to make 五仁月饼

  • 1.在糖浆里加入枧水,搅拌混合均匀。在混合好的糖浆里,加入花生油,并搅拌混合均匀,倒入面粉和奶粉
  • 2.揉成面团,揉好的面团包上保鲜膜静置1个小时
  • 3.熟花生、熟杏仁、熟腰果用刀切碎,或者放入保鲜袋中,用擀面杖敲碎
  • 4.放入白糖
  • 5.放入玉米油、熟瓜子仁、熟黑白芝麻、葡萄干,加入玫瑰酱
  • 6.倒入炒好的熟糯米粉、凉白开水,和成团即可
  • 7.和好的五仁馅
  • 8.取五仁馅50克,搓成圆球
  • 9.面团每个30克
  • 10.取一个饼皮面团,在手掌上压扁
  • 11.把五仁馅放在面团中间
  • 12.用两只手把饼皮慢慢往上推,包裹住五仁馅,要尽量让饼皮厚薄均匀,不要露馅
  • 13.包成圆形
  • 14.模具中薄薄的刷一层油,把圆球面团放进月饼模子
  • 15.压出月饼花纹,提起月饼模子,就好了。在月饼表面喷点水,放进预热好200度的烤箱烤焙,烤5分钟左右,等月饼花纹定型后,取出来在表面刷上蛋液,再放进烤箱,饼皮均匀上色以后就可以了,一共大约需要烤20分钟
