麻辣鸡丝凉面

Steps to make 麻辣鸡丝凉面

  • 1.鸡胸肉清洗干净后加入盐、葱、八角、花椒煮20分钟。
  • 2.煮熟的鸡肉捞出放凉后撕成丝状。
  • 3.准备好花生碎和芝麻碎。花生入烤箱180度烤7-8分钟后取出去皮后装入保鲜袋里用擀面杖压碎,芝麻180度烤5分钟左右取出后放案板上擀面杖压碎。花生和芝麻碎一次可以多做一些密封保存,下次吃的时候直接用,很方便。
  • 4.鲜面条入锅蒸15分钟。
  • 5.蒸熟的面条取出放凉后加入2勺植物油。吃之前将面条放开水里烫1分钟马上捞出。这样处理过的面条口感比较劲道。
  • 6.芝麻酱里加入2勺芝麻油、2勺生抽、1勺陈醋、1勺盐少许凉白开搅拌均匀。
  • 7.香葱和香菜清洗干净后切碎。
  • 8.面煮好捞起后装碗里,放入花生芝麻碎、浇上调好的芝麻酱、在浇上辣椒油,撒上香葱和香菜即可
