最是那一口细腻美好-----舒芙蕾芝士蛋糕
前几天做了一款不含芝士的舒芙蕾,芝士蛋糕一直是我家小熊的最爱,含有芝士的舒芙蕾怎么能不尝试一下呢。

含有芝士的舒芙蕾最适合晚上来做,做好后在冰箱冷藏一晚,第二天就可以吃啦。

确实非常细腻,但不知道是不是我的味蕾比较迟钝,我觉得跟以前做的芝士蛋糕口感差不多呢。

  • 奶油奶酪300克
  • 黄油45克
  • 蛋黄57克
  • 细砂糖55克(入蛋白)
  • 玉米淀粉11克
  • 牛奶150克
  • 蛋清95克

Steps to make 最是那一口细腻美好-----舒芙蕾芝士蛋糕

  • 1.奶酪隔热水软化后搅打顺滑。
  • 2.加入溶化的黄油。
  • 3.搅打均匀备用。
  • 4.蛋黄中加入糖,搅拌均匀。
  • 5.加入玉米淀粉,拌匀。
  • 6.将煮沸的牛奶倒入蛋黄中,边倒边搅拌。
  • 7.然后将混合蛋黄糊用小火加热,边加热边搅拌,成糊状后关火。
  • 8.将蛋黄糊倒入奶酪糊,搅打均匀。
  • 9.盖上湿布备用。
  • 10.蛋白入冰箱冷冻至稍有薄冰的状态,拿出来后,分三次加糖,将蛋白搅打至湿性发泡状态。
  • 11.蛋白分三次与奶酪糊翻拌均匀。
  • 12.圆模里垫上烤纸,倒入芝士糊,将表面稍抹平,入烤箱烘焙。
