Steps to make 萨琪玛

  • 1.鸡蛋三个打碎搅匀
  • 2.放入适量的中筋面粉搅成絮状
  • 3.揉成软一点的面团(炸出来会很蓬松)盖好醒发半小时以上
  • 4.醒发到光滑松软就可以了
  • 5.然后拿出醒好的面团揉一会
  • 6.然后案板上撒些玉米淀粉防沾把面团按扁按圆
  • 7.擀成大约3毫米厚的薄片,擀面时粘了就撒玉米淀粉
  • 8.然后用擀面杖卷一块
  • 9.用刀从中间划开
  • 10.然后切成细丝越细越好,切好丝撒些玉米淀粉防粘
  • 11.切好用筛子筛去多余的淀粉
  • 12.锅中放油烧至五成热,丢两个面条能迅速飘起来就好了
  • 13.然后倒入面条炸制
  • 14.炸到微黄就可以了
  • 15.用勺子上下颠出沙沙的声音
  • 16.炸好捞出备用
  • 17.锅中放入白糖,麦芽糖和水刚开始大火烧至糖都完全融化后加点黄油也可以加糖桂花进去转小火慢熬
  • 18.熬制糖成黏稠状密集冒大泡转密集小泡就差不多了(糖的温度大约在115度-118度)
  • 19.测试方法,用勺子舀点糖向下滴呈丝状,糖丝断开后能不断的回弹挂在勺子边上呈倒三角形片状
  • 20.另一个测试方法 :用筷子沾点糖凉几秒钟能拉出黏丝或者盘子里放凉水用勺子舀点糖放进几秒钟后用手能捏成软软的糖片就可以了
  • 21.然后把熬好的糖浆倒入炸好的面条里最好一边倒一边搅拌
  • 22.提前准备好一个模具盘,盘底四周都刷层油,然后撒上些白芝麻和果葡丁
  • 23.搅拌好面条后倒入模具盘里压实晾凉
  • 24.晾凉后倒扣脱模
  • 25.然后就可以切块了
  • 26.随意切随意摆
