清明前后春水充沛,这时的艾叶嫩绿茂盛。用它做成的青团,Q口弹牙,馥郁芳香!咬一囗,春天的感觉!

  • 艾叶1000g
  • 600ml
  • 咸蛋黄20个
  • 肉松250g
  • 白沙糖20g
  • 橄榄油20ml
  • 芭蕉叶若干
  • 食用碱少许

Steps to make 艾叶青团

  • 1.艾叶洗干净。
  • 2.把锅里的水煮开,放些食用碱,煮10分钟。
  • 3.捞起焯水放进料理机,加点水,打成汁液,把汁液加热至80度左右。
  • 4.倒入糯米粉和粘米粉,加少许白糖,加几滴橄榄油,用筷子搅成絮状。
  • 5.把混合材料用手揉成光滑面团静置备用,接着准备馅料:蛋黄放进烤箱上下火120度烤5分钟,拿出来压碎,放入肉松,加入沙拉酱拌匀,捏成剂子备用。
  • 6.把艾叶粉团分成剂子,用双手捏成窝状,包入馅料,收口,把生胚放进处理好的芭蕉叶上(芭蕉叶要扫一层油)。
  • 7.生胚放入蒸笼,水开之后放进锅里大火蒸18分钟,关火,焖5分钟。
  • 8.绿油油的艾叶青团出锅啦。
