核桃仁也含有丰富的营养素,不仅是最好的健脑食物,还是神经衰弱的治疗剂。核桃仁还对其它病症具有较高的医疗效果,如它具有补气养血、润燥化痰、温肺润肠、散肿消毒等功能。

  • 全麦粉70g
  • 细砂糖20g
  • 1/2小勺
  • 肉桂粉1/2小勺
  • 鸡蛋1个
  • 速发酵母粉4g
  • 牛奶70g
  • 无盐黄油15g
  • 牛奶100g
  • 高筋面粉20g
  • 葡萄干100g
  • 核桃仁60g
  • 肉桂粉1大勺
  • 砂糖3大勺

Steps to make 肉桂果仁全麦包

  • 1.准备汤种:将20g高筋面粉和100g牛奶混合均匀后上火,小火边加热边搅拌,直到成糊状、勺子划过会留下痕迹即可。冷却至室温后,盖上保鲜膜,入冰箱冷藏1小时以上,最好过夜;
  • 2.将汤种、牛奶、鸡蛋、盐、糖、肉桂粉依次放入面包机的面包桶里;
  • 3.再加入全麦粉70g和高筋面粉200g,并在面粉顶部挖个小坑,小坑里放入酵母粉;
  • 4.启动“和面”功能,敞开盖揉面20分钟;
  • 5.“和面”结束后加入提前软化的黄油;
  • 6.盖上盖子,撒料盒中放入掰碎的核桃仁和葡萄干(这个量很大,可能放不进去,可以留下一些,等自动撒料后再通过料盒撒进去即可,也可以减少点儿量)。
  • 7.选择“粗粮面包”功能,重量700g,烧色“浅”,启动面包机,开始“搅拌1”(因为要自动撒料,所以盖上盖子);揉面到25分钟左右时,自动撒入馅料,此时打开盖子,让面包机继续揉面;
  • 8.“搅拌1”结束后,按“启动/停止”键,暂停面包机;拿出面团,轻轻滚圆,并让馅料分布更均匀、面团裹住所有葡萄干和核桃仁;
  • 9.将面团放进面包桶,按下“启动/停止”键,面包机继续工作,开始“发酵1”;
  • 10.“发酵1”结束后,面包机短暂进行“搅拌2”。结束后,暂停面包机,取出面团滚圆,盖上保鲜膜松弛15分钟。其间,密切注意面包机,一旦自动开始工作,再次按下“启动/停止”键,暂停面包机,直到整形结束;
  • 11.松弛后的面团,收口朝上擀成长舌状,并自上而下卷起来,宽度和面包桶的宽度差不多,捏紧收口;
  • 12.取出搅拌桶里的搅拌刀,将面包卷放入面包桶,并轻轻略压实;盖上盖子,按下“启动/停止”键,面包机继续工作,开始“发酵2”和“烘烤”,等着面包烤好就行了。
  • 13.“烘烤”结束后蜂鸣响起,按键停止,打开面包机,检查烘烤程度,如果感觉不足,可以再启动一个烘烤程序,加烤5、6分钟。
  • 14.面包快烤好的时候,融化一些无盐黄油,并将3大勺细砂糖和1大勺肉桂粉混合均匀,放在大盘里备用;
  • 15.烤好的面包立即脱模,放到网架上(用隔热手套哦);趁热刷上一层厚厚的化黄油;
  • 16.再将面包放在大盘里,顶面和四个侧面滚上厚厚一层肉桂糖,冷却1小时以上,切片、开搓——
