凉拌麻辣肘子
我很少做肘子,原因是儿子不怎么爱吃猪肉,曾经给他做过冰糖肘子,他还算是喜欢,这不是要过年了嘛,我又忍不住买了两个肘子,不做热食的,做成凉拌的,这样孩子们回来想吃随时可以吃上,而且经过这样凉拌的肘子,香而不腻,口感软烂中还有点肉的筋道嚼劲,用仲景的麻辣油调味,更是把肉的油腻感去了个净光,吃起来非常好吃,而且做法也特别简单,零厨艺也可以轻松搞定。我把两个肘子去骨后分成了四块,只用了半块就拌了一盘,给儿子拿走两块煮好的,让他过年时招待朋友也可以做一个菜。儿子说这个菜很有面,估计大家得夸他的厨艺了,其实这是妈妈做得哩。哈哈,儿子永远忘不掉的就是妈妈做得菜啦

Steps to make 凉拌麻辣肘子

  • 1.我买的是带骨的猪前肘,去骨后一个分成了两块,凉水入锅焯烫去除血沫后,凉水冲洗干净表面浮沫,凉水冲洗煮好的皮会筋道些,口感好。把肉皮表面的猪毛弄干净,再度清洗干净
  • 2.备好煮肉料:八角2,花椒30粒左右,肉桂2段,香叶4片,酱一块
  • 3.锅中水烧开,放入煮肉料
  • 4.大火煮开后转小火煮一小时。
  • 5.煮好的肘子捞出晾凉,然后切片
  • 6.放洋葱和大葱丝和盐
  • 7.加醋,醋要多一点,可以去腥除腻
  • 8.加生抽提鲜
  • 9.倒入麻辣油提味
  • 10.拌均匀
  • 11.装盘上桌享用吧
  • 12.香而不腻哦
