立春,为中国二十四节气之一,喻意春季的开始,时间在2月3-5日之间,该时太阳位于黄经315°。从这一天到立夏这段期间,都被称之为春天。此外,立春还是中国的传统节日,代表新的一年开始,因此立春又称立春节、打春等,流行鞭春牛的风俗。立春这天吃春饼和春卷,称为咬春。

Steps to make 炸春卷

  • 1.面粉适量,盐,大油(猪油)适量,加入面粉里,滚烫开水烫面,不要全烫熟,盆里要余干面粉,加少许凉水和面团,面团软硬适中!
  • 2.取适量面团,搓圆!
  • 3.擀圆,刷一层植物油!
  • 4.撒少许面粉,两个饼坯叠加!
  • 5.擀薄坯,锅温小火,1分钟烙制熟,饼坯揭开!
  • 6.锅里油适量,葱姜爆锅,十三香适量,耗油适量酱油适量,适量肉馅,盐适量,炒熟!
  • 7.用勺子均匀把肉馅摊好在饼坯上面!
  • 8.刷一层蛋清,炸制过程不散!
  • 9.全部做好!
  • 10.油温6成热,放入春卷!
  • 11.炸制两面金黄,出锅!
  • 12.成品!
