广式五仁月饼
一直想做月饼,网上找了不少做法,终于材料备齐,准备初次尝试做月饼

  • 小苏打水15g
  • 转化糖浆100g

Steps to make 广式五仁月饼

  • 1.在碗中加入转化糖浆,小苏打水、油,搅拌均匀
  • 2.筛如面粉,充分搅拌
  • 3.揉成光滑的面团,用保鲜膜包住,醒发2小时
  • 4.将花生、核桃等果仁炒熟
  • 5.放入保鲜袋中,用擀面杖碾碎
  • 6.白芝麻炒熟(黑芝麻也可,没有黑芝麻,放一袋黑芝麻糊挺不错的)
  • 7.将适量面粉炒熟
  • 8.葡萄干切碎
  • 9.将碾碎的果仁、葡萄干、白芝麻放入碗中,加入白糖、油、少许白酒(我原来不知道为什么加白酒,后来烤出来以后,吃月饼时闻到了一点点酒香味,果仁的味道也更浓郁了,看来加白酒是有用滴),再加入炒熟的面粉
  • 10.加入适量凉白开,揉成团,不散即可,五仁馅就做好了(各种果仁都可以随意加)
  • 11.将醒发好的面团分成20g一个的小剂子,五仁馅分成30g一个的剂子
  • 12.将面团擀薄,包入五仁馅,慢慢收口
  • 13.在磨具中洒少许面粉,放入面团,压出月饼样子,放入预热190度的烤箱中
  • 14.烤5分钟定型后,拿出,表面刷一层蛋黄液,继续烤制
  • 15.大约20分钟后,即可出炉了,此时出炉的月饼,表皮还是硬的,得在室温下,密封放几天,回油后就可以吃了
