Steps to make 紫苏鱼块

  • 1.所有材料准备好。
  • 2.鱼块清洗干净。
  • 3.将鱼切成块,加盐,生抽,料酒,醋,姜丝腌制30分钟。(中途将鱼翻面,入味均匀。)
  • 4.紫苏洗净待用。
  • 5.蒜剥皮,大葱切段备用。
  • 6.炒锅加热,倒入适量食用油。
  • 7.将腌制好的鱼块放入锅中煎。(油5成热时,放鱼块,防止热油溅到身上意外烫伤)
  • 8.中火慢煎,中途用筷子轻轻夹住鱼身,用锅铲搭配用力,将鱼身翻面。(鱼不急着翻身,煎到金黄色时候再翻,不然鱼肉会烂。)
  • 9.两面都煎到金黄色的时候,将腌制鱼块的汤倒到锅中煮。
  • 10.加入蒜瓣和葱段,并加入蚝油和糖,慢煮5分钟。
  • 11.鱼快熟时,倒入紫苏叶,并加入鸡精拌匀,用淀粉勾芡,关火装盘。
