可可奶油蛋糕

  • 鸡蛋3个
  • 植物油45克
  • 热水40克
  • 可可粉15克
  • 70克
  • 淡奶油200克
  • 巧克力豆4颗

Steps to make 可可奶油蛋糕

  • 1.先来准备好蛋糕体所需要的食材,一一精准称重,这里糖用50克。
  • 2.可可粉加入热水搅拌均匀备用。
  • 3.鸡蛋将蛋黄和蛋白分离,分别盛放在无水无油的干净容器里,蛋黄中加入牛奶、植物油、可可糊搅拌均。
  • 4.再筛入低筋面粉翻拌均匀。
  • 5.蛋白加入糖打发至硬性发泡,即出现小尖钩。
  • 6.取1/3的蛋白加入到蛋黄糊里翻拌均匀,再全部倒回到蛋白糊里,翻拌和切拌均匀,千万不能画圈,不然会消泡的,也就是蛋糕发不起来。
  • 7.28cm烤盘铺一张油纸,将拌好的蛋糕糊倒入烤盘里,表面尽量抹平,再震几下震出大气泡。
  • 8.烤箱预热,上下火,中层150度烤20分钟,具体温度和时间要根据自己的烤箱来定。
  • 9.蛋糕体烤好后马上取出来,拎着油纸将蛋糕体取出来,倒扣到晾网上,再撕去油纸晾凉。
  • 10.蛋糕体放凉事平均分成四份。
  • 11.淡奶油加糖打发至硬性发泡,一片蛋糕片挤一层淡奶油,如此反复。
  • 12.最后一片蛋糕片放好后,再挤上淡奶油,最后用巧克力豆装饰一下,挤淡奶油的时候裱花嘴用星星嘴或类似的就可以,不用也是没问题的。
