这个方子量比较大,适合我这种一次做很多的类型。大家可以把所有食材除以二来做

Details of ingredients

  • 鸡蛋6个
  • 低筋面粉100g
  • 可可粉10g
  • 90g
  • 玉米油60ml
  • 牛奶80ml
  • 柠檬汁3滴
  • 即溶咖啡粉20g
  • 朗姆酒40g
  • 热开水100g
  • 淡奶油250g
  • 蛋黄4个
  • 细砂糖100g
  • 吉利丁片6片
  • 马斯卡彭芝士500g

Steps to make 蛋糕版-提拉米苏(可以做6盒)

  • 1.先来制作戚风蛋糕片,蛋清蛋黄分离。
  • 2.蛋黄内加入玉米油和牛奶,搅拌均匀。
  • 3.筛入低筋面粉和可可粉。
  • 4.翻拌均匀。
  • 5.蛋清分三次加入白砂糖打发,提起打蛋器有个倒三角就是打发好了。
  • 6.将蛋黄糊分三次加入蛋白中,翻拌均匀,倒入烤盘,180度烤20分钟(烤箱要提前预热10分钟),戚风蛋糕片就做好了。
  • 7.吉利丁片放入凉水中泡软。
  • 8.制作咖啡水:将咖啡粉,热开水,朗姆酒混合均匀成咖啡水。
  • 9.蛋黄50克细砂糖打发,加入泡软的吉利丁片,加热融化(一定要小火加热,水温不要过高,不能沸腾)。
  • 10.加入马斯卡彭芝士,小火加热融化搅拌到无颗粒。
  • 11.250克淡奶油加入50克糖(也可以减至25克糖)打发至六成,类似稠酸奶状,有纹路但是很快会消失。
  • 12.将芝士糊与淡奶油混合均匀。
  • 13.往芝士糊中加入一些咖啡水调味。
  • 14.在模具底部铺上一层蛋糕片,扫上咖啡水,倒入奶油芝士糊。重复此操作,可以做两层或三层。
  • 15.在顶部撒上一层可可粉。
  • 16.放冰箱冷藏2个小时,开吃。
