河北小吃——{麻辣香煎皮渣}
想这个想很久了,也历经了几次失败,不过味道真是没人失望,Q弹,嚼劲十足,还有一股特殊的香味,尝过难忘呀~~~~~

传统的皮渣是河北省邯郸市、河南省安阳市的名吃,用粉条配以海米,葱花、蒜片、姜末、猪油,加水搅拌蒸制而成,可煎可烩,炒菜作汤。

我这次介绍的是经过自己改良过的,做法其实大致相同,只是细节上做了些改变,更符合湖北人的口味,还换掉了猪油,采取先煎后炒的方法,油腻感会少很多,更适合夏天食用,口感不打折哦,仍然风味十足!

值得尝试的一道菜~

    Steps to make 河北小吃——{麻辣香煎皮渣}

    • 1.准备红薯粉丝(最好是不用泡发可以直接烹制的那种)葱姜蒜切末、十三香备用
    • 2.红尖椒、青辣椒切丝备用,红薯淀粉
    • 3.红薯粉丝煮软即可捞出,不可煮的太过,否则成品口感不够Q弹。放入一半葱姜蒜末、十三香、盐、鸡精趁热搅拌均匀
    • 4.拌好后将粉丝平铺于干净容器中,红薯淀粉用清水化成淀粉浆,倒入,没过粉丝表面
    • 5.用余下的淀粉浆将表面整理平整,然后上蒸锅大火蒸制15分钟至淀粉浆透明,拿出晾凉
    • 6.晾凉后将粉饼揭下,切成自己喜欢的大小
    • 7.锅内油放宽些,烧热入粉块翻炒至不粘锅捞出沥油
    • 8.将油倒出,刷锅后重新起小火,少油焙香花椒粒
    • 9.花椒粒放一边也可捞出不要,然后入红尖椒丝、洋葱、剩余的葱姜蒜末翻炒出香
    • 10.倒入粉块,转中火炒制,沿锅边喷入料酒
    • 11.调入生抽、糖、少许盐(之前加的够可不用再另放)
    • 12.临出锅放入青椒丝、撒上白芝麻即可
