栗子冰皮月饼
又是一年的中秋节即将来临,冰皮月饼是一种中秋节食品。从香港传入。20世纪80年代,冰皮月饼在香港的市场出售。作为广东人,很早就喜欢并爱上了中秋节吃冰皮月饼,于是开始DIY冰皮月饼,做上自己喜欢吃的馅。昨天做紫薯冰皮月饼,今天做了栗子冰皮月饼。PS:主料是皮料,辅料是馅料,月饼皮与月饼馅的比例按3:7,以下材料是与20个50克月饼的配方

  • 粘米粉35克
  • 澄粉20克
  • 牛奶180克
  • 糖粉50克
  • 色拉油15克
  • 板栗500克(肉)
  • 细白砂糖100克
  • 麦芽糖50克
  • 色拉油100克

Steps to make 栗子冰皮月饼

  • 1.制作月饼馅1:新鲜板栗洗干净,熟熟,去壳
  • 2.制作月饼馅2:去壳之后的板栗,用高压锅煮烂,再乘热用料理机打碎;
  • 3.制作月饼馅3:热锅,干炒干打碎的栗子肉,没有水分,加入细白砂糖把糖炒融;
  • 4.制作月饼馅4:加入麦芽糖炒,至融化,加入色拉油分三次加入炒,炒至不粘锅,且能成团;
  • 5. 制作月饼馅5:炒好的馅,放凉,揉成团,分成35克一份,刚好20份量。
  • 6.制作月饼皮1:糖粉、牛奶、色拉油加入搅拌;糯米粉、粘米粉、澄粉过刷,拌均;然后一起加入拌均,没有颗粒状,用保鲜膜包裹好,放置30分钟
  • 7.制作月饼皮2:大火蒸约20分钟,即可,PS:具体看各种的锅和火的大小,为了防止水蒸气进入,我用保鲜膜包裹了
  • 8.制作月饼皮3:.拿出拌均,冷却,揉成面团
  • 9.分15克一份,刚好20等分
  • 10.皮擀薄,放入馅
  • 11.合口,揉均匀
  • 12.放入50克装的月饼模具中,向下压,即可出
  • 13.这是做好板栗冰皮月饼,放入冰箱冷藏二天口感更佳
