Details of ingredients

  • 中筋面粉300g
  • 植物油100g
  • 鸡蛋2个
  • 糖粉40g

Steps to make 红薯派

  • 1.面粉、糖混合,倒入植物油
  • 2.用筷子搅拌成如图的样子
  • 3.加入鸡蛋液
  • 4.揉成团即可,不要揉太久。将揉好的面团放冰箱冷藏松弛半个小时
  • 5.红薯洗干净,微波炉或者蒸熟都可以
  • 6.去皮后放入适量奶粉,如果红薯不够甜可以适当放些糖,用勺子撵碎,成红薯馅
  • 7.将松弛好的面团取出,分成一大一小两份
  • 8.将大的面团放在保鲜膜中间,用擀面杖擀成薄面片,其大小比模具大一点
  • 9.擀好的面皮扯掉保鲜膜铺到模具上(事实证明我的九寸披萨盘太大了,得买设备了),用手指轻按派皮,使之与盘子紧贴
  • 10.去掉多余的边角
  • 11.用叉子在派皮底部扎出小孔
  • 12.将小面团同样操作的手法,擀成面皮,用刀均匀的切成条状,宽度大概1cm
  • 13.铺上红薯馅,撒上一层椰蓉(没有可以不放椰蓉,我的椰蓉打开时间比较久了,想办法消耗掉)
  • 14.将小长条排好,两条之间隔着一条的空隙,然后横着放一根,然后再取小长条将隔着的空隙摆上。(不知道我表达清楚了没有,此处我由于编的有点乱,忘记拍了一张图)
  • 15.掀起第一次竖着摆放的小长条
  • 16.再横着放上一根,将撩起的小长条放下,如此操作完所有,这样编织起来比较省力,不用穿来穿去的麻烦
  • 17.编完后,整理多余的边角。事实证明我预留的面有点少了,编的有点稀松
  • 18.表面刷鸡蛋液,烤箱上下火180度,烤40分钟,表面金黄即可
  • 19.成品还不错,表皮酥脆,馅心绵软。
  • 20.原谅我切的那么难看
