Steps to make 花生酥月饼

  • 1.花生先烤熟,去皮,打成花生碎。
  • 2.加入提前烤熟的白芝麻,拌匀,再加入馅料中所有的食材搅拌均匀,用手一抓能成团即可,馅料就做好了。
  • 3.分成30克一个的小剂子。
  • 4.主料中的油和糖先搅拌均匀,加入糖浆和水搅拌至完全乳化后再加入低筋粉、泡打粉、小苏打,搅拌均匀。
  • 5.至无干粉即可,避免过度揉搓,以免起筋。
  • 6.分成25克一个均匀的小剂子,月饼皮就好了。
  • 7.取一个饼皮,按压成圆形,包入馅料。
  • 8.放入模具中,压成花生形状,依次摆入烤盘中。
  • 9.表面刷上一层薄薄的蛋液。
  • 10.放入预热好的烤箱中,180度,中层,烤15-18分钟即可出炉,中间根据上色情况加盖锡纸。
