小炒陈村粉
和他相识的最初,某天他请我和室友去吃宵夜,点的一道小吃也是陈村粉,当时室友还特别要求店里的老板加上一小碟辣椒酱,拌在粉里,试过后我也觉得,米粉拌点辣椒酱才够味,从那时起,这个习惯一直至今从未改变~
陈村粉产于广东省佛山市顺德区陈村镇,已经有近80年的历史。1927年,顺德陈村人黄但创制出一种以薄、爽、滑、软为特色的米粉,声名鹊起,当地人称之“粉旦(但)”。此后,他们将粉送到外地,外地人以“陈村粉”名之。由于制作精细,陈村粉产量不高,一天只能产粉几百斤,因而显得格外“矜贵”,外地人不易享此口福。陈村粉跟老牌的小食沙河粉相比,陈村粉属后起之秀。制作陈村粉有十几道工序,道道工序都有秘决。例如,新米要放半年才能用,制成的粉才别爽;洗米也有讲究,要把米放在盆里狠搓十多分钟,然后再泡30分钟以上,就连磨米的石磨都要选用特别的石料特制。陈村粉入口十分嫩滑,吃起来还富含嚼劲,有时候还有弹牙的感觉,总之是非常好吃的。

  • 胡萝卜1/2根
  • 黄豆芽50克
  • 生菜2片
  • 2克
  • 酱油2汤匙
  • 鸡粉少许
  • 蚝油1汤匙
  • 玉米淀粉1/2汤匙
  • 香油少许

Steps to make 小炒陈村粉

  • 1.猪瘦肉洗净沥干水,切丝;
  • 2.瘦肉调入盐、鸡粉、少许酱油、淀粉,香油,搅拌均匀,腌制片刻;
  • 3.腌制瘦肉的同时,取出其他食材;
  • 4.胡萝卜去皮、洗净切丝,豆芽洗净去头尾,生菜洗净切丝,葱洗净切段;
  • 5. 热锅,放入适量油,倒入瘦肉和葱头部分爆炒至肉丝发白;
  • 6.铲起,放在一旁备用;
  • 7.继续热锅,倒少许油,放入豆芽煸炒;
  • 8. 倒进胡萝卜丝翻炒片刻;
  • 9.倒入切段的陈村粉;
  • 10.调入酱油;
  • 11.调入蚝油,端起平底锅抛炒均匀粉皮,让其均匀上色入味;
  • 12. 倒入生菜丝;
  • 13.最后倒入炒好的瘦肉丝,翻炒均匀即可。
