白灼芥兰——素食者的芥兰
近些年,随着营养过剩导致的高血压、冠心病、糖尿病、高脂血症、肥胖症等“富贵病”发病率的增高,以及为了健康和美体而兴起的减肥瘦身热潮的影响,吃素逐渐成为一种时尚。
    随着都市吃素一族的逐渐增加,今天特意为素食朋友们介绍两道营养丰富、口感清爽的粤菜芥兰——白灼芥兰 & 耗油炒芥兰。
    芥兰能补充素食者缺失的某些营养。芥兰菜含丰富的维生素A、C、钙、蛋白质、脂肪和植物醣类。有润肠去热气,下虚火,止牙龈出血的功效。

    Steps to make 白灼芥兰——素食者的芥兰

    • 1.用小刀将芥兰茎部的老皮剥除。
    • 2.图2是芥兰茎部老皮剥除后的样子。
    • 3.将芥兰顶部和下端的老叶去除,洗净。
    • 4.调芡汁:在一个碗里调入适量淀粉、水、美极鲜味汁、白糖、精盐、鸡精搅拌均匀备用。
    • 5.锅内放半锅水,加入食用油、精盐,不要千万别加盖焖,这样才会脆绿,水开后放入芥兰。
    • 6.芥兰汆一下马上捞起摆盘;(有的喜欢捞起后浸泡在冰开水里,我也试过,但我觉得那样口感没有直接摆盘的好吃,也有点不卫生)。
    • 7.锅烧热,倒入花生油烧热,放入蒜末爆香后倒入芡汁。
    • 8.改中火,等蒜香充分溶于芡汁时即可熄火,然后把汤汁均匀的淋在摆好盘的芥兰上面即可。
