清炖土鸡

Steps to make 清炖土鸡

  • 1.土鸡收拾干净,用火烧净浮毛。
  • 2.将鸡剁成大块,抠掉胸肺,再次清洗干净。
  • 3.冷水下锅,放葱段、姜片、白酒。
  • 4.大火烧开后改小火,从滚头上将鸡肉逐块捞出来。
  • 5.将捞出来的鸡肉冲洗干净,放入另一口锅中,加足开水,放姜片、葱结。
  • 6.撇去浮沫、鸡油,小火慢炖两小时左右。
  • 7.放入适量咸盐,再次撇净鸡油。
  • 8.成品。
