烤羊腿
这羊腿是吃野草长大的绵羊腿,肉厚膘肥。一条后腿我给分成几部分。肉厚的键子部位我给切成薄片,葱爆羊肉真过瘾;边角料我用来剁馅,羊肉大葱饺子味道真不错;剩下的这段用来烤,想必是极好的!
羊腿去掉筋膜,拉几道刀口,用现成的孜然烤肉料腌上6个小时,中途再翻几次身,再重新将腌料淋在刀口处。烤时可以先用锡纸将羊腿包好,烤30分钟,使水份能很好地保持在肉中,使得肉鲜嫩,再打开锡纸露出羊腿来,继续烤30分钟,将多余的水汽烤出来,并且使肉质紧密。这前后算下来,要烤一个小时。烤出来的羊腿肉厚的地方还是挺嫩的,但是筋头巴脑的地方,如果牙口儿不好,吃起来还是挺磨牙的!想必这就是放养的羊和饲养的羊的区别吧!但好在我家四口人喜好各不同,我偏爱啃骨头和筋头巴脑的慢慢咀嚼,越吃越有滋味。

Steps to make 烤羊腿

  • 1.羊腿一条,去掉筋膜,清洗干净
  • 2.两侧肉厚的地方划刀口
  • 3.孜然烤肉料准备好
  • 4.倒少许生抽在盆中,再倒入适量的孜然烤肉料,混合成糊糊
  • 5.用小勺将糊糊抹在羊腿及刀口上,腌6个小时左右,中途翻几次,重新抹几次孜然糊糊
  • 6.腌好的羊腿放在铺有锡纸的烤盘上
  • 7.入预热好的烤箱中层,190度上下火,先用锡纸包好羊腿烤30分钟,再打开锡纸烤30分钟左右
  • 8.烤好的羊腿用刀拉片食用
