油泼扯面
提起油泼扯面,必定会想到火辣辣的油泼辣子,好吃没的说,但是用普通食用油泼的辣子口感偏油腻。今天用金龙鱼稻米油泼的辣子,口感清爽不油腻,滚烫的热油泼在辣面上,发出滋滋的响声,一碗色香味俱佳的油泼面就做成了。

  • 面粉400克
  • 金龙鱼稻米油1汤匙
  • 生抽1汤匙
  • 老陈醋半汤匙
  • 辣椒面1茶匙

Steps to make 油泼扯面

  • 1.面粉分次加水、1克盐揉匀,静置30分钟。
  • 2.面团再次揉光后切成小剂子。
  • 3.搓成长条后抹油,盖保鲜膜醒1小时。
  • 4.醒好的面擀开,中间压一下。
  • 5.双手慢慢将面片拉长,从压痕处扯开。
  • 6.将扯面下入煮开的锅中煮2分钟。
  • 7.放入油菜稍煮。
  • 8.碗里放入生抽和老陈醋、少许盐。
  • 9.把扯面,油菜捞入碗中,放入辣椒面。金龙鱼稻米油加热后趁热泼入碗中。
  • 10.拌匀后就可以开动啦!
