湖南小吃——糖油粑粑
糖油粑粑是湖南的著名小吃,正宗的糖油粑粑是炸的,而且要用一大锅的油和糖来炒糖油,制造工艺精细讲究,有特殊的制造过程。我这个应该算是家常版“糖油粑粑”的做法吧!
记得小的时候,我和老弟总会缠着妈妈给我们做来吃,妈妈在灶台做,我们姐弟俩就在边上看,瞪着溜圆的眼睛,还流着口水。
现在大了,都各自有了自己的小家庭,那样的回忆总是会在梦里出现。
第一次做这个给女儿吃,看着女儿的馋样儿,不免再次回忆起小时候的事情。

Steps to make 湖南小吃——糖油粑粑

  • 1.准备糯米粉
  • 2.取小碗,放入红糖和冰糖
  • 3.糯米粉种一边加水一边用筷子搅拌均匀,搅拌至干稀适中的程度,揉成面团
  • 4.再加入白糖、蜂蜜和适量开水搅拌至糖粒完全溶化
  • 5.将揉好的糯米粉团分割成约60克一个的小剂子
  • 6.逐一搓圆拍扁
  • 7.煎锅倒入70克油,中火加热,至油温四成热时转小火
  • 8.下入生坯慢慢煎制
  • 9.小火将一面煎好
  • 10.之后翻面继续煎
  • 11.将糖汁倒入锅中
  • 12.摇晃锅底,使糖汁均匀的与油混合成为糖油,并将粑粑翻转一至两次使两面都裹上糖汁,最后大火收汁至浓稠时关火
  • 13.盛入碗中就可以吃啦
