【陕西正宗洗面凉皮】
作为一个地道的陕西人,陪我一年四季最多的小吃也算是主食,莫过于凉皮了。陕西凉皮种类很多,做法各异,调味时各具特色,口味也不同。麻酱凉皮,秦镇凉皮,汉中米皮,面筋凉皮等等。以“白,薄,光,软,筋,香”文明,街边小巷到处很多凉皮摊,可以算是陕西一年四季常吃的主食小吃了。之前介绍过陕西的麻酱懒凉皮,这次做的是陕西洗面凉皮,有面筋的凉皮,也是别具特色。

  • 五香粉1小勺
  • 3勺
  • 芝麻酱1小勺
  • 香油1勺

Steps to make 【陕西正宗洗面凉皮】

  • 1.1.面粉里加入水,慢慢揉匀,揉成面团盖上保鲜膜或湿布醒几小时。
  • 2.2.盆里加入足够的清水,把面团慢慢放在水里揉捏。
  • 3.3.慢慢清水变白,继续揉捏,洗面。
  • 4.4.洗二十分钟左右,面水颜色变得更白,洗出面筋。
  • 5.5.洗好的面筋捞出,放在碗里,上锅蒸半小时。
  • 6.6.洗好的凉皮面糊静置2小时以上,此时凉皮面糊分离成2层,上层清水,下层面水,把上层清水倒掉。
  • 7.7.凉皮锣刷一层薄油。
  • 8.8.舀一勺面糊倒入凉皮锣。
  • 9.9.慢慢把面糊在凉皮锣里均匀的摊开。
  • 10.10.锅里提前烧一锅开水,把凉皮锣放入热水里开始蒸凉皮。
  • 11.11.盖上锅盖,全程大火,约2分钟,表面冒大泡,盖上盖子再闷半分钟到1分钟就好了。
  • 12.12.提前准备好一盆凉水,把蒸好的凉皮锣放入凉水中冷却。就这样反复蒸,蒸好多凉皮放在篦子上。
