这道“黄金素蒸饺”,可没有真正的黄金哦,因为是用胡萝卜汁和面,蒸出的饺子色泽金黄金黄的,像黄金一样亮丽,所以就打个比喻而已。依然是素馅料,这次同样选择了喜欢爱的香菇与木耳做馅料,这两者都是营养丰富而又健康的食材,不过在做这类阴生的菌类菜时,需要加点生姜来去去其中的寒气。
吃饺子时蘸上蒜泥陈醋酱,再滴上几滴香油,那叫一个香呀,保准吃到停不了嘴。

  • 1.原料图
  • 2.将香菇、木耳用温水浸泡发大;
  • 3.胡萝卜洗净并擦成蓉,然后用干净纱布绞出胡萝卜汁,胡萝卜渣另作馅料用,往胡萝卜汁中加入5克盐化开;
  • 4.取一个干净不锈钢盘,筛入面粉,加入少许制精油,将胡萝卜汁慢慢倒入面粉中,边倒边用筷子搅拌成絮状。
  • 5.然后和成光滑面团;
  • 6.往面团盖上湿布进行饧发1-2小时,最好每饧发五分钟就揉一次,多揉几次,这样做出的饺子皮的口感会更好。
  • 7.饧面的时候,再来处理饺子馅:将泡发好的木耳、香菇洗净沙子,切碎,生姜剁成姜末,然后再加入胡萝卜渣、少许盐、生抽、精制油一起搅拌均匀即成素馅。
