月饼之—豆沙馅
洗豆沙是非常传统的方法,炒出来都豆沙细腻口感好,看似复杂其实也很容易,大家不妨试试,外面卖的豆沙真是没办法吃,简直就是吃淀粉疙瘩,里面添加不少的淀粉,还是自己动手做吧,味道真的非常不错

Steps to make 月饼之—豆沙馅

  • 1.豆子用水浸泡一个晚上
  • 2.淘洗干净
  • 3.加入适量的水,大火煮开该中小火焖煮,中途需翻拌,需要加开水以免烧干,
  • 4.煮约三十分钟用勺子按压一下豆子看是否酥烂,没酥烂还需开小火焖煮,基本一小时不到肯定可以煮熟煮透
  • 5.接下来洗沙,过滤网下放一小盆接适量的水,把煮好的豆沙少量舀入过滤网中
  • 6.用勺子按压豆沙,豆沙会随着水过滤到盆里
  • 7.过滤不掉的都是豆壳,去掉豆壳
  • 8.全部过滤好后连同盆中的水和豆沙一起到入棉布袋里,布袋纹路要非常密集,不能用太稀的纱布,装好布袋后挂起来滴水,直到没有水再滴下,用手挤压一下就可以炒了
  • 9.倒入不粘炒锅里
  • 10.先用中小火炒至稍干加入糖翻炒,要不停的翻炒
  • 11.再分三次倒入油,每倒一次炒匀后再倒入下次,倒油后要快速翻炒避免油溅起烫到手
  • 12.炒到不粘锅不粘刮刀
  • 13.用刮刀按压不会散开基本就炒好,看起来很细腻吧
  • 14.可以用来做月饼馅了
