大盘鸡
大盘鸡以爽滑麻辣,土豆甘面,汤汁浓稠,香浓美味,深受大家喜爱,我今天做的是整鸡,因为太大做了半只,乡下散养的笨公鸡,软烂有嚼头,汤汁入味,非常的香!

  • 公鸡半只
  • 绿尖椒一个
  • 元葱半个
  • 大葱一颗
  • 一块
  • 大蒜二瓣
  • 八角一个
  • 花椒粒一小把
  • 干辣椒二个
  • 啤酒一罐
  • 精盐6g
  • 一品鲜酱油20g
  • 料酒20g
  • 胡椒粉2g
  • 鸡精2g
  • 老抽2g

Steps to make 大盘鸡

  • 1.鸡剁成大少合适的块,用清水投洗二次,洗去血水。
  • 2.冷水下锅,加适量料酒,烧开撇去浮末,焯水一分钟。
  • 3.清洗干净控干水份备用。
  • 4.准备辅料,土豆切滚刀块,胡萝卜、绿尖椒、元葱均切小块,大葱切段、姜和大蒜切片备用。
  • 5.起锅烧油,加入八角炸香。
  • 6.下入葱姜蒜小火煸炒出香味。
  • 7.下入鸡块,下入花椒粒和干辣椒煸炒,多炒一会,炒出鸡块中的水份、炒出香味,顺着锅边烹入一品鲜酱油炒出酱油的香味。
  • 8.加入适量的清水,今天我多加了些水,因为是笨鸡,如果肉食鸡没过肉块既可,再加入一罐啤酒,加入少许胡椒粉,2克老抽提色。
  • 9.大火烧开后转小火炖三十分钟,加入适量精盐。
  • 10.下入土豆块继续炖煮二十分钟。
  • 11.这时肉烂土豆成熟,汤汁已浓稠,下入青椒、元葱和胡萝卜,转大火快速的收一下汤汁,加入鸡精拌匀既可出锅。
