Steps to make Braised Wheat with Mushrooms

  • 1. After washing the glutinous rice, use an electric rice cooker to cook it with the same amount of water as usual.
  • 2. Wash the pork and cut it into pieces. Set aside scallions and ginger.
  • 3. Put the pork and scallions and ginger together into a meat grinder and grind them into small pieces.
  • 4. Pork does not need to be ground too finely.
  • 5. Soak the shiitake mushrooms in warm water in advance
  • 6. Cut off the roots, squeeze out the water and put it into the mixer
  • 7. Grind into small pieces using a mixer.
  • 8. Heat up the wok and stir fry the ground pork over medium heat.
  • 9. Stir fry until slightly brown, then reduce to low heat.
  • 10. Pour the chopped shiitake mushrooms into the pot and stir fry evenly.
  • 11. Add dark soy sauce and vinegar.
  • 12. Add white sugar, salt, pepper, and five spice powder.
  • 13. Continue to stir fry evenly and turn off the heat.
  • 14. Put the cooked glutinous rice into a frying pan and stir evenly with a shovel.
  • 15. Mix the roasted wheat filling and let it cool down for a while.
  • 16. Start making roasted wheat husks. Pour flour into a bowl and add half a spoonful of salt.
  • Slowly pour in clean water and stir the flour while pouring.
  • 18. Stir the flour until it is fluffy, take off the chopsticks and knead them into a ball by hand.
  • 19. Knead until a smooth dough is slightly harder than the dumpling skin.
  • 20. Take half of the dough, knead into long strips, and cut into equal sized pieces.
  • 21. Take a small pill, knead it round, flatten it, and roll it out like a round dumpling skin.
  • 22. Use a rolling pin to press out the hem of the skirt.
  • 23. Pressed roasted wheat husks.
  • 24. Add an appropriate amount of roasted wheat filling
  • 25. Fold the hem of the skirt and use your fingers to wrap around the waist and hem of the roasted wheat skirt, tightening it in the middle.
  • 26. Pinched roasted wheat as shown in the picture. The hem of the skirt is slightly open, and the waist is tightened.
  • 27. Lay small oil paper or carrot slices at the bottom. Steam over high heat in a steamer for 8 minutes.
