香橙戚风
最近用橙子做了好多点心,不仅是因为现在是橙子的季节,更主要的是,橙子加入任何糕点里,都会让糕点的色香味提升一个档次,我是完全抗拒不了橙的诱惑。

Details of ingredients

  • 低筋面粉80g
  • 鸡蛋4个
  • 色拉油40g
  • 橙肉汁60g
  • 细砂糖蛋黄部分10g
  • 细砂糖蛋清部分50g
  • 柠檬汁几滴
  • 橙皮屑一个橙子的皮量

Steps to make 香橙戚风

  • 1.准备橙肉汁,将橙子洗净,用刀小心切下橙皮,尽量不要切到白色部分。
  • 2.橙子切开,剥出橙肉。将橙皮切碎,橙肉用果汁机打成汁备用。
  • 3.蛋清蛋黄分离,蛋黄中加入细砂糖,以及一半的色拉油,搅拌均匀,再加入另外一半色拉油,拌匀。
  • 4.加入60g橙肉汁,搅拌匀均,再加入橙皮屑,拌匀。筛入低筋面粉,搅拌匀均。
  • 5.蛋清里挤入少量柠檬汁。将蛋白低速打15秒左右,加入三分之一细砂糖,之后分2次把剩余的细砂糖加完,具体细节,美天里很多,可以参考下。
  • 6.最后打至如图状态。
  • 7.取三分之一蛋白加入蛋黄糊中,拌匀,之后将面糊倒入蛋白中。
  • 8.用上下翻拌方法,将所有面糊拌匀。
  • 9.倒入8寸戚风模具。双手扶着两边,拇指按住烟囱模,磕几下,震出大气泡。烤箱170度预热5分钟后,放入烤箱中下层。
  • 10.烤箱内测温度170度,35分钟出炉,出炉后立马倒扣冷却。
