四川凉面

  • 1.碱水面,放入开水锅(你可以选择新鲜碱水面或者像这种干的,都可以)。
  • 2.中火煮面,用筷子拨开让面别粘黏。
  • 3.煮到面条还有稍微的硬心,大概七八分熟即可。
  • 4.捞出过冰水,或者直接捞出沥干水分用都可以。
  • 5.冰水倒掉,沥干水分后拌少许生清油(生菜籽油)用抖面的方法抖匀油分,让面条不沾,放一边充分凉透,或者用风扇小风吹凉。
  • 6.蒜泥水备好。
  • 7.凉透好的凉面加入所有佐料。
  • 8.充分拌均匀即可。
  • 9.四川凉面是甜辣味儿的。
