  • 温水70g-75g
  • 低筋面粉120g
  • 玫瑰花酱220g
  • 熟糯米粉20g
  • 熟花生碎15g

Steps to make 鲜花饼

  • 1.将黄油、温水、中筋面粉、糖放入厨师机中开始揉面。
  • 2.揉出薄膜即可,将面团装入保鲜袋内醒10到20分钟。
  • 3.用烤箱把芝麻(180°烤10分钟)、花生(180°烤5—8分钟)烤熟,中小火炒糯米粉至微黄。把玫瑰花酱、熟糯米粉、芝麻、花生碎混合搅拌,分成12个圆球状,冷藏或冷冻备用。
  • 4.将面粉加入黄油混合,用手搓成油酥团装入保鲜袋备用。
  • 5.将醒好的油酥团、面团分成12份。用水油皮包住油酥,采用虎口包法,收口朝下,依次包好。
  • 6.将包好的面团,用保鲜膜盖好,以免风干。
  • 7.将包好的油酥皮(收口朝上)擀成牛舌状,由上往下卷起来,盖保鲜膜松弛15分钟。再将松弛好的油酥皮(收口朝上)再次擀开,由上往下卷起。
  • 8..将面卷用手指从中间按下,然后两边向中间折叠,用擀面杖微微擀开,放一个玫瑰花馅,用虎口向上推着慢慢收口。收口向下,轻轻用手掌按扁。
  • 9.烤箱提前预热160°,将鲜花饼用模具简单装饰,放入烤箱烘烤25—30分钟。(烘烤10分钟时,加盖锡纸)
