豉汁蛏子

Steps to make 豉汁蛏子

  • 1.把大蒜切碎、姜切片、辣椒切小块、香葱切段备用。
  • 2.蛏子首先要放在清水中吐沙,记得买蛏子的时候叫老板把养蛏子的水一起给,因为海鲜摊的水都是经过配比的,这有助于蛏子吐沙,比自己用盐水养好很多。蛏子吐完沙后,再把壳冲洗干净,烧一锅开水,把蛏子放进去焯水,蛏子开口后就捞出。
  • 3.蛏子捞出后再用清水冲洗一遍,把一些浮沫洗掉,然后沥干水分备用。
  • 4.锅烧热后加入花生油,把大蒜、姜片和豆豉放进去小火爆香。
  • 5.把蛏子放进锅里,转大火翻炒均匀。
  • 6.翻炒均匀后加入青椒,青椒很容易熟,炒到断生就可以了。
  • 7.然后依次加入蚝油、酱油、糖和盐调味,翻炒均匀后加入红辣椒和香葱稍微炒一下即可出锅。
  • 8.香辣、豉香四溢的炒蛏子就做好咯,这时候来一碗米饭更赞哦。
