Steps to make 云丝丸子

  • 1.在超市买成品的瘦肉末,加入姜、蒜、盐、鸡精、料酒、淀粉混匀,再加入葱混一下放在一旁腌制片刻待用。
  • 2.三勺洋芋粉加冷水拌匀,刚好混成没有阻力的样子,鸡蛋打散加入混合备用。
  • 3.摊蛋皮:不粘锅烧热,用油刷轻轻地刷上一层油,不可多,烧至即将冒烟的时候将鸡蛋混洋芋粉搅拌均匀后倒入小部分,不粘锅这是要迅速转动以便在锅里均匀铺开,再均匀加热成形,待周边都开始离开锅面时用两手托起将蛋皮翻面,加热少许起锅冷却待用。
  • 4.起锅后的蛋皮正在冷却。
  • 5.将蛋皮切成五厘米左右长的细丝。
  • 6.将切好的蛋皮细丝放入水中散开备用。
  • 7.将腌制好的肉末团成直径两厘米左右的丸子(大小事个人喜好而定),从碗中托出一些蛋皮细丝附着在肉丸表面,入蒸锅水开后再蒸13分钟(根据肉丸大小调整时间)。
  • 8.将肉丸出锅摆盘,盘内以西兰花、葱段作点缀。(ps:第一次全程记录DIY,求支持^_^)
